Using the side of a spoon, peel ginger. Cut into thin slices.
Scrub carrots well. Cut into 1-inch pieces.
In a medium pot, heat avocado oil over medium heat. Add onions and sauté until translucent. Add ginger and continue cooking for another couple minutes.
Add broth and carrots. Increase heat to bring to a boil. Simmer for 15 minutes.
Using an immersion blender or regular blender, blend soup until smooth.
