Slice collard green in half lengthwise. Cut away the stem. Blanche collard green in boiling water for 30 seconds (optional, but yummy). You can eat collard raw as well.
Spread hummus over a collard green half. On one end, add chicken pieces, carrots, cucumber, avocado.
Begin rolling from the filling end, keeping everything tight. Once rolled, insert a toothpick into the center to keep it together.
